Lessons from Cooking Roasted Potatoes

Growing up, I have been taught about a hundred ways of cooking potatoes for breakfast, lunch, supper and the 'in between's. So this morning, I want to indulge us about lessons garnered from cooking roasted potatoes.

After you've peeled, washed the potatoes and put them on steaming hot oil in the pan, it goes through a process. First, it looses its molecular integrity -it becomes soft, mushy, succulent and all. Secondly, as time goes on the outer part hardens and thirdly, it turns into a beautiful golden brown delicacy that can be served with fried liver stew and tomato harissa (oh, so much goodness in one plate! Mh!)


Anyway, the thing about roasted potatoes is, if you're the type who doesn't like/ want to deep fry potatoes things can seem little scary when the potatoes become all soft and mushy in kidogo oil. The results worsens when you try to stir! And if you are the type who gets ideas of cooking roasted potatoes in a sufuria instead of a pan, your heart will be beating from the floor at this stage. Because everything that can go wrong will SEEM like its going wrong... especially if you are there, staring, stirring, freaking out.

This is what I learned from cooking roasted potatoes: You NEED to TRUST THE PROCESS. If you've peeled you've done everything right. If the oil whether deep or shallow is hot, trust that the potatoes will cook to perfection. Instead of standing there freaking out, praying, hating your kitchen appliances, at the verge of giving up on the endeavor, about to turn off the fire... Instead of doing all this, trust the process. In fact, once you put the potatoes in the sufuria engage yourself in something else, cut the ingredients for the next food or go watch a movie for a little while. Yes, scroll through whatsApp status... just get your focus a little out of the potatoes. Just a little. Then you will find these things in a very beautiful shade of golden brown. The aura, the taste, your meal just tastes a little bit better once - you trust the process and take a step back.
